Brown teff flour is a nutritious grain originating from Ethiopia, where it has been cultivated for thousands of years. Since 2002, a company in the Netherlands has also been cultivating it. Teff flour is often used in gluten-free baked goods; at Happy Belly, we use both light and brown teff. It provides a slightly nutty flavour and a fine texture, ferments very well, and gives the bread a pleasant acidity. In Ethiopia, teff is traditionally used to make injera, a nutritious, spongy flatbread. Due to its excellent nutritional value and versatility in baking, teff is gaining worldwide popularity as a healthy and flavourful alternative to other grains.

This gluten-free grain is rich in fibre, protein, and essential minerals such as calcium, iron, and magnesium, which contribute to healthy bone structure and energy metabolism. Brown teff flour also contains a high amount of resistant starch, which is beneficial for blood sugar levels and gut health.
